(Mini) Sephora Haul

Oh Sephora! My one true love who never lets me down…but makes my bank account depressed. I didn’t plan on going shopping, but when I got to the mall yesterday I couldn’t help but stop by. 😏

My first item in the basket is the Tarte Clean Slate Timeless Smoothing Primer. When I searched this in the store I actually thought my vision went blurry for a second, no joke! I have tons of fine lines on my hands and it smoothed out the back of it so nicely that I couldn’t pass this up! How is no one talking about this?! $39 Here.

Second item in my bag is the new NARS Soft Matte Compelte Concealer in Crème Brûlée. I’m a Concealer whore so to speak, I have tried everything on the market! I’ve heard great things about this and can’t wait to share my review. $30 Here.

Felt tip eyeliners are SO hard to perfect. There’s only two on the market I’ll ever buy again (until I walk but a stand and see a new one) This is the Stila Stay All Day Waterproof Liquid Eyeliner in Intense Black. The tip last forever and stays to sharp. And when they say Intense black, the mean it. $22 Here.

Last, but CERTAINLY not least, is the incredible Laura Mercier Loose Setting Powder in Translucent. There is a reason this is so hyped on the internet and magazines. Because it’s ah-may-zing! This is the only Powder I’ve found to that do ALL of the following 1) not give flashback 2) not oxidize 3) keep my skin Matte all day 4) fill in fine lines. Now, the RCMA no color Powder is a CLOSE second, which is why I use that commercially. But this one will cost you a pretty penny. $38 Here.

Spaghetti Squash!

This dinner was a real reach for me. Carbs have been the hardest thing to get under control with my new lifestyle change, getting those cravings are really tough to battle. 

I really wanted some pasta! So for the first time ever I made spaghetti squash. Take this journey with me through my recipe below 😊

Five easy ingredients.

  • One (2lb) Spaghetti Squash 
  • One Jar of Your Favorite Sauce
  • 1/4 Cup Parmesan Cheese
  • One Lb Chicken Breast
  • 1/4 diced onion

Preheat your oven to 375 degrees. Poke your squash down the center with a fork as below and microwave for 5 minutes. 

Use oven mitts to remove from the microwave. Cut in half, drizzle olive oil and sprinkle salt and pepper on each half. Place face down onto a non-greased cookie sheet. 

While this is in the oven let’s move to the chicken and sauce! I prefer cooking with a cast iron skillet but you can use a regular skillet if preferred. Slice your chicken into tender size pieces. Oil your pan and cook on medium heat. I added S&P with some Italian seasonings. Cook for 5 minutes and flip for another 5. 

Once they are slightly browned add your fixed onion and minced garlic to the pan. Cook until onion is clear. 

Add your sauce! 

Summer on low heat until your squash is ready. Remove your squash form the oven and scrape the insides onto a plate. 

If you aren’t a fan of mushy texture I recommend squeezing your squash in a cheese cloth to get rid of too much moisture. 

Add your squash to the plate, top with sauce, chicken and sprinkle some Parmesan! Voila! 

I’m pleasantly surprised with how much I loved this dinner. How do you like it? 

ColorPop – Aquarius Review

If you haven’t heard about ColourPop you’re seriously missing out in the beauty world. They are a very inexpensive online only makeup brand that has come a LONG way in quality over the last year. 

One of my all time favorite beauty YouTuber’s is Kathleen Lights. She’s a very humble, sweet and honest guru. She’s always looking for inexpensive high quality makeup – she’s now done three (maybe more?) collaborations with ColourPop and she never disappoints! 

This is her Aquarius trio! It’s a special run CP did for her Birthday this year. It includes a gloss, a satin liquid lip and a matte liquid lip. There are GORGEOUS! 

Suck beautiful colors, and for a $15 bundle you really can’t go wrong.

My Jog/Walking Essentials

It’s a gorgeous day in Oregon and I feel like going for a jog this evening. Do you have any must-haves before you walk out the door? Here’s mine-


First of all, I don’t know anyone who enjoys going for a walk without their music.  I love my iPhone 6s Plus. I’ve thought about getting the 7 but I honestly see no reason to do so. I make some awesome playlists on Spotify that are either encouraging or relaxing depending on the pace I plan to be at. I go through headphones like crazy so I just pick up cheap ones at Ross or BestBuy like these.

I’ve never been someone to use a re-usable bottle (which is terrible) until I moved to Oregon. The water here is so fresh and doesn’t have chemicals added to our tapwater.  You can make ice from it and the cubes are crystal clear. So I finally caved and purchased a great insulated bottle by TAKEYA. Typically similar brands are very expensive for one but one day walking through Costco I found a two pack for $29! Complete steal – and now I never leave the house without mine. It keeps my water freezing cold for over a day (if I don’t drink it all first).

My Nike sweater! This is my all time favorite sweater. I think it’s most peoples once they try it on – my little sister stole mine for about 3 months *eye roll*. Thankfully the Nike headquarters is located only 5 miles from my house and I occasionally can go the employee store which is 50% off everything always!  If you want to check out the sweater Macy’s typically carries it and has coupons regularly.

Last is my favorite protein mix that I have when I get back home. I pick these Olly packs up from Target in all kinds of flavors. My favorite is the salted caramel though. Really easy pre-packaged sizes, through it in my single size blender with some almond milk and ice, and yummmm! A nice refreshing treat that’s good for your muscles. And only 3 Weight Watchers points 😉

Does Anyone Love Lemon Like I do?


I have a MAJOR sweet tooth when it comes to all things tangy. Lemon anything being my favorite! I’ve been doing my best to stay on track with eating better and becoming more active. These Lemon Muffins fit right in with my new regiment.

Currently I’m trying out Weight Watchers and I’m having some success. With starting a new lifestyle though, it takes some research. Did you know that you can substitute eggs and oil while baking for Greek Yogurt? AND it makes your baked goods stay…dare I say the word…moist!

This is definitely one of the easiest recipes I’ve ever done. That’s also saying a lot since I can’t bake to save my life. -Cooking is a different story-


This is all you need:

  • 1 Box Lemon Cake Mix
  • A Single Greek Yogurt (lemon or vanilla)
  • 1 Cup Water
  • Cooking Spray
  • Muffin Tin

I preheat my oven to 375 degrees. Combine the cake mix, yogurt and water into a medium sized bowl. Whisk until fully mixed with no lumps.

Your batter may become fluffy if you let it sit for very long while waiting on your oven, if it does just give it a quick mix again before moving forward.

Spray your muffin tin with your favorite cooking spray (I like PAM with Olive Oil)

Bake for 15-20 minutes, checking on it at 12 incase your oven cooks faster than mine.

And Viola! Yummy, sweet and tasty lemon muffins. Did I mention that if you use the mini muffin size it’s only 2 PointPlus on Weight Watchers each? …YAAASSSS…


If you have picky eaters in the house, I bet you they won’t even know the difference. I know mine didn’t. 😉


How Did I Get Here?


I have always been someone who has had too many interests to focus on one single thing. I’ve always loved sharing my passions with others. There have been many times I looked into starting a YouTube Channel about makeup, a fitness Instagram or a cooking page on Facebook – Nothing has stuck for me. This is why I’ve started The L’ambitieuse Enthusiast, my home for everything me.

I chose this name because I aim for the stars with whatever I become passionate about. L’ambitieuse means “the ambitious” or “ambitious one” in French. Hence, the ambitious enthusiast. If you stick around I’ll be randomly talking about all things life, like beginning to practice yoga, traveling with my younger sister, accomplishments at work and some girly stuff too!

I love photography and have been developing my skills in that aspect, I hope to relate all my articles with some type of illustration. I enjoy trying out new beauty products and will occasionally have reviews here as well.
